
APEC 정상들이 극찬한 한식 중 특히 인기를 끌었던 대표 한국음식들은 세계 정상들
의 입맛을 사로잡을 정도로, 한식의 정수와 지역적 특색, 그리고 미학이 잘 드러난다
는 평가를 받았다 하는데 '천년한우 갈비찜', '곤달비나물 비빔밥', '경주콩 순두부탕',
'제철 해산물샐러드 등이 소개되었는데 레시피도 궁금하여 알아보았다.
The Korean dishes highly praised by APEC leaders—especially those that gained notable
popularity—were recognized for capturing the essence of Korean cuisine, highlighting
regional characteristics, and showcasing culinary aesthetics to the extent that they impressed
world leaders' palates. Dishes such as Cheonnyeon Hanwoo Galbijjim (braised premium
Korean beef short ribs), Gondalbi Namul Bibimbap (rice mixed with seasoned regional greens),
Gyeongju Soybean Soft Tofu Soup, and Seasonal Seafood Salad were introduced. Curious
about the recipes, I looked them up.
1. 경주 천년한우 갈비찜 ( Cheonnyeon Hanwoo Galbijjim)

경주 특산 한우를 두툼하게 썰어 간장 베이스 양념에 장시간 조려낸 대표적 궁중요리로
부드럽고 깊은 감칠맛, 조랭이떡, 전복 등 고급 재료를 곁들여 번영과 풍요를 상징한다
고 할 수 있겠다.
A representative royal court dish made by thick-cutting Gyeongju’s specialty Hanwoo
beef and braising it for a long time in a soy sauce–based seasoning, it features a tender
texture and deep umami. Garnished with premium ingredients like joraengi-tteok
(gnocchi-shaped rice cakes) and abalone, it is said to symbolize prosperity and
abundance.
레시피:
한우 갈비 1kg, 무 1/2개, 당근 1/2개, 표고버섯 3개, 조랭이떡 100g, 전복 2마리
- 양념: 간장 8T, 설탕 2T, 배즙 3T, 다진 마늘 1T, 다진 파 1T, 참기름 1T, 후추, 물 2컵
- 갈비는 찬물에 1시간 담가 핏물을 뺀다.
- 양념 재료를 섞어 30분간 재운다.
- 냄비에 갈비, 물, 양념을 넣고 끓이다가 중불로 50분간 조린다.
- 무, 당근, 버섯, 전복, 떡을 넣고 20분 더 조린다.
- 국물이 졸면 완성.
Recipe:
- Hanwoo beef short ribs 1 kg, Korean radish 1/2, carrot 1/2, shiitake mushrooms 3,

- minced scallion 1 Tbsp, sesame oil 1 Tbsp, pepper, water 2 cups
- Soak the short ribs in cold water for 1 hour to draw out the blood.
- Mix the seasoning ingredients and marinate the ribs for 30 minutes.
- Place the ribs, the water, and the seasoning in a pot. Bring to a boil, then simmer
over medium heat for 50 minutes. - Add the radish, carrot, mushrooms, abalone, and rice cakes, and simmer 20
minutes more. - When the sauce has reduced, it’s ready.
2. 곤달비나물 비빔밥 (Bibimbap with seasoned gondalbi greens)

경주 특산 곤달비(산나물)에 고사리, 표고버섯, 당근, 애호박 등 다양한 나물을 볶아 밥과
함께 비비는 건강식으로 쓴맛이 적고 향긋해 해외 손님들도 부담 없이 즐길 수 있다고
한다.
A healthy bibimbap made by stir-frying Gyeongju’s specialty gondalbi (a wild mountain
herb) with various vegetables like bracken, shiitake mushrooms, carrot, and zucchini,
then mixing them with rice. Mild in bitterness and pleasantly aromatic, it’s said to be
easy for overseas guests to enjoy.
레시피:
- 곤달비 50g, 고사리 30g, 표고버섯 2개, 당근 1/4개, 애호박 1/4개, 밥 1공기
- 양념: 고추장 1T, 참기름 1T, 깨소금, 간장, 다진 마늘
- 곤달비, 고사리 등 나물을 각각 데쳐 물기 제거 후 간장, 다진 마늘, 참기름에 무친다.
- 표고버섯, 당근, 애호박은 채 썰어 볶는다.

season with soy sauce, minced garlic, and sesame oil. - Julienne the shiitake mushrooms, carrot, and zucchini, and stir-fry.
- Place the seasoned greens and sautéed vegetables over hot, fluffy rice.
Add gochujang, sesame oil, and sesame seeds, then mix well.
3. 경주콩 순두부탕(Gyeongju Soybean Soft Tofu Soup)

경주산 콩으로 만든 순두부를 맑은 국물에 담백하게 끓인 요리로, 콩 본연의 고소함과 부드
러운 질감이 특징으로 한식의 미니멀리즘과 섬세함을 잘 보여주고 있다고한다.
A dish that gently simmers soft tofu made from Gyeongju-grown soybeans in a clear broth;
characterized by the soybeans’ natural nuttiness and a silky texture, it is said to exemplify
the minimalism and delicacy of Korean cuisine.

- 순두부 1모, 멸치육수 2컵, 애호박·양파·당근 각 약간, 소금, 후추
- 냄비에 멸치육수를 끓인다.
- 순두부와 채소를 넣고 한소끔 끓인다.

깔끔하고 산뜻한 맛이 특징이라고 하니 입맛이 돈다.

with seasonal produce like sweet persimmon and a pine-nut dressing.

위에서 소개한 내용은 APEC에서 외국 정상들을 위하여 특별히 준비한 메뉴
이지만 한국을 대표하는 정체성과 시대정신이 깊게 스며 있는 음식은 아래의
7가지 메뉴를 빼고는 생각할 수 없어 선정해 역사와 문화적 맥락을 중심으로
자세히 풀어보고자 한다.
Although the items introduced above were specially prepared for foreign leaders
at APEC, when it comes to dishes that deeply embody Korea’s representative
identity and zeitgeist, it is hard to imagine them without the seven dishes below.
I have selected them and plan to unpack them in detail with a focus on their
historical and cultural contexts.
1. 김치와 김장(Kimchi and the Kimjang Tradition)

한국 식탁의 상징인 김치는 계절과 지역에 따라 수백 가지로 나눠진다. 겨울을 준비하며 온 동네가
모여 김치를 담그는 ‘김장’은 공동체 문화의 정수로, 서로의 노동을 나누고 음식을 나누는 연대의식의
발로였던 것 같다.
Kimchi, the hallmark of the Korean table, comes in hundreds of varieties depending on the season
and region. Kimjang—the communal making of kimchi in preparation for winter—is the essence
of community culture, an expression of solidarity in which neighbors share both labor and food.
문화적 의미로 보면 김장은 유네스코 인류무형문화유산으로 등재된 한국의 대표 생활문화이며
장독대, 땅속 저장, 공유와 나눔의 미학까지, 음식이 사회적 관계를 어떻게 엮어주는지 보여주고
있다.
In cultural terms, kimjang is a representative Korean way of life inscribed on UNESCO’s
Intangible Cultural Heritage of Humanity. From jangdokdae (outdoor earthenware jars) and
underground storage to the aesthetics of sharing and reciprocity, it shows how food weaves
social relationships.
지역적으로 레시피가 달라 해산물이 풍부한 남도는 젓갈과 해산물을 넉넉히 쓰고, 북부 지역은 양념
이 비교적 절제되어 담백하며, 김치의 종류도 배추김치, 총각김치, 동치미, 백김치 등 계절과 용도에
맞춘 레시피가 전승되어 왔다.
Recipes vary by region: in the south, where seafood is plentiful, generous amounts of jeotgal
(salted seafood) and other seafood are used, while northern styles are more restrained and
clean in flavor. Varieties such as baechu-kimchi (napa cabbage kimchi), chonggak-kimchi
(ponytail radish kimchi), dongchimi (radish water kimchi), and baek-kimchi (white kimchi)
have been passed down to suit different seasons and purposes.
현재 김치를 이용한 요리에는 김치전·김치찌개·김치볶음밥등으로 아무리 먹어도 질리지 않는 한국인
하면 김치가 떠오를 정도로 유명해진 글로벌 한국 대표음식이 되어버렸다.
Today, kimchi-based dishes—like kimchi jeon (savory pancakes), kimchi jjigae (stew), and kimchi
fried rice—remain perennially appealing, and kimchi has become a globally recognized emblem
of Korean cuisine, one of the first foods people associate with Korea.
2. 비빔밥( Bibimbap)

다양한 나물·고기·나물이 밥 위에 오방색(청·적·황·백·흑)으로 담겨 조화롭게 비벼 먹는 비빔밥은 ‘조화’와 ‘균형’
의 미학을 담은 한 그릇으로 남은 반찬을 알뜰히 모아 비벼 먹던 생활의 지혜가 의식과 미학을 만나 완성된 음식
이라 할 수 있겠다.
Bibimbap, in which a variety of seasoned greens and meats are arranged over rice in the five cardinal colors
(blue/green, red, yellow, white, black) and mixed together, embodies the aesthetics of harmony and balance.
It grew out of the everyday wisdom of frugally gathering leftover side dishes to mix with rice, refined into a
dish imbued with ritual and aesthetics.
문화적 의미로 살펴보면 오방색은 동양의 음양오행 사상과 연결되며, 색과 재료의 균형을 맞춰 건강과 안녕을
기원하는 상징성이 강한 대표적인 음식이다.
Culturally, the five-color palette is linked to the East Asian yin-yang and Five Elements philosophy;
by balancing colors and ingredients, the dish strongly symbolizes wishes for health and well-being.

비빔밥의 종류에는 전주비빔밥(황포묵·육회·나물의 조화), 진주비빔밥(육전과 해산물의 포용), 통영비빔밥
(해산물 중심), 돌솥비빔밥(지끈한 솥의 열과 누룽지 향) 등 지역 정체성이 그릇에 담긴게 아닌가 한다.
Varieties include Jeonju bibimbap (a harmony of hwangpo-muk, yukhoe, and greens), Jinju bibimbap
(featuring yukjeon and seafood), Tongyeong bibimbap (seafood-centered), and dolsot bibimbap
(celebrated for the searing heat of the stone bowl and the toasty aroma of scorched rice),
each a bowlful of regional identity.
비빔밥도 시대에 맞춰 채식·비건(채식주의) 버전부터 곤달비·두릅 같은 제철 산나물 버전까지, 현대인의
취향과 건강을 아우르며 세계인이 사랑하는 한국 대표 음식이 되었다.
Keeping pace with the times, bibimbap now ranges from vegetarian and vegan versions to seasonal
mountain-herb renditions with gondalbi and dureup, embracing modern tastes and health, and has
become a Korean signature loved around the world.
3. 장 문화와 된장찌개(Korean Jang Culture and Doenjang Stew)

한국 음식의 뿌리는 ‘장’문화에 있다고 할 수 있겠다. 콩을 메주로 띄워 간장·된장·고추장으로 숙성시키는
과정은 계절의 리듬을 읽고 시간과 미생물의 힘을 빌리는 삶의 지혜가 담긴 건강 음식이다.
One could say the roots of Korean cuisine lie in its jang culture. Fermenting soybeans into meju and
aging them into ganjang (soy sauce), doenjang (soybean paste), and gochujang (red pepper paste)
is a healthful tradition that embodies the wisdom of reading the seasons and harnessing time and
microbes.
문화적으로 보면 장독대는 집과 마을의 풍경이자 생활 과학의 현장이었고, 된장찌개는 ‘한 끼의 중심’으로,
소탈하지만 집의 맛과 기품을 지키는 한국 가정식의 상징이라 할 수 있겠다.
Culturally, the jangdokdae—rows of outdoor earthenware jars—formed part of the household and
village landscape and served as sites of everyday science. Doenjang-jjigae (soybean paste stew),
the “center of a meal,” is a humble yet emblematic dish of Korean home cooking that preserves a
household’s flavor and dignity.
집집마다 내려오는 ‘우리 집 장맛’은 곧 그 집의 역사였으며, 햇콩과 햇고추가 나는 시절에 맞춰 장을 담그고,
바람길과 햇볕을 고려해 장독을 관리를 했다.
Each family’s distinctive “jang taste” was effectively its history: jang was made in step with the harvests
of new soybeans and fresh red peppers, and the jars were tended with careful attention to airflow and
sunlight.

현대에 이르러서는 면연력 증진과 암치료에도 효과가 있다하여 의학적으로도 연구가 진행되고 있으며 공예적
장과 전통 장을 복원하려는 움직임이 커지고 있으며, 사찰음식,비건 한식에서도 장의 효과를 현대적으로
재해석하고 있는 듯하다.
Today, jang is the subject of medical research for potential benefits such as supporting immunity and even
in cancer care; there is a growing movement to revive artisanal and traditional jang; and temple cuisine
and vegan Korean cooking are reinterpreting the value of jang in contemporary ways.
4. 떡국과 송편(세시풍속의 음식): Rice cake soup (tteokguk) and half-moon rice cakes (songpyeon) are traditional Korean foods associated with seasonal customs.

설에는 가래떡을 썰어 끓인 떡국을 먹으며 한 살을 더 먹는다고 여겼고, 추석에는 솔잎 향을 입힌 송편
을 빚어 풍요를 기원했으며 집안 어른과 아이가 함께 모여 빚는 과정 자체가 교육이자 축제였던 것으로
기억이 난다.
On Seollal (Lunar New Year), people ate tteokguk—sliced garaetteok simmered in broth—believing it
added a year to one’s age. On Chuseok (the harvest festival), they made pine-scented songpyeon
to pray for abundance; I remember the very act of elders and children gathering to shape them as
both an education and a celebration.
문화적 의미로는 하얀 떡국은 새해 첫날의 정결함과 새 출발을, 길게 뽑은 가래떡은 장수를 상징하며,
송편은 반달 모양으로 ‘이제 차오를 풍요’를 의미하며, 속에는 깨·콩·밤·팥등을 넣어 바라는 복을 담았다
한다.
In cultural terms, white tteokguk signifies purity and a fresh start on the year’s first day, and the long
cylinders of garaetteok symbolize longevity. Songpyeon, with its half-moon shape, represents
abundance that is waxing, and fillings like sesame, beans, chestnuts, and red beans were used to
pack in wishes for good fortune.
지역적으로 다양하게 발전했는데 장국 떡국, 사골 떡국, 굴·굴비·닭고기 등 지역 재료에 따라 풍미를
달리 하였고 송편도 쑥·참깨·콩 등 지역 곡물과 들의 향을 담아 다양성을 추구하였다.
Regionally, the dishes developed in diverse ways: jang-guk tteokguk (a clear, soy sauce–
seasoned broth), sagol tteokguk (beef bone broth), and versions using local ingredients such
as oysters, dried yellow corvina (gulbi), or chicken. Songpyeon also varies, embracing local
grains and the fragrance of the fields with mugwort, sesame, beans, and more.
요새는 더욱 발전하여 명절뿐 아니라 사계절 디저트로 떡이 재 주목받으며, 떡바·떡케이크 등 현대적
변형이 이어지고 있다.
These days, rice cakes have evolved further: beyond holidays they’re enjoying renewed attention
as year-round desserts, with modern variations like tteok bars and tteok cakes.
5. 사찰음식(산채정식·연잎밥 등):Korean Temple Cuisine (sanchae jeongshik, yeonip bap, etc.)

역사적 배경으로 불교 문화는 살생을 피하고 오신채(마늘·파·부추·달래·흥거)를 절제하는 식생활을 전하고
있으며 제철 산나물과 발효장, 최소한의 양념으로 ‘재료의 제맛’을 끌어내는 것이 핵심으로 전세계인에게
주목받고 있다.
Historically, Buddhist culture has advocated a diet that avoids taking life and refrains from the five
pungent vegetables—garlic, scallions, garlic chives, wild chives, and asafoetida.
Its core is to draw out each ingredient’s natural flavor with seasonal mountain greens,
fermented jang, and minimal seasoning—an approach that has attracted worldwide attention.
문화적 의미로 보면 절제와 공존의 철학, 자연과의 조화, 음식 수행(마음챙김)이 한 그릇에 담긴 것으로 남김
없이 먹고, 남은 것은 다시 살리는 ‘No Waste’ 정신은 오늘의 지속가능성과 맞닿아 있는 것이 아닐까 한다.
Culturally, temple food embodies a philosophy of restraint and coexistence, harmony with nature,
and mindful eating as practice. The “no-waste” ethic—finishing what is served and reviving any leftovers
—aligns closely with today’s ideals of sustainability.
대표 구성은 산나물 무침·약선 장아찌·두부·버섯전골·연잎밥·사찰김치(젓갈 무첨가) 등. 한 상이 ‘향·식감·색’
의 균형을 통해 조용한 울림을 주고있다.
A typical spread includes seasoned mountain greens, yakseon pickles (healthful, medicinal-style pickles),
tofu, mushroom hot pot, lotus-leaf rice, and temple kimchi (made without jeotgal, or salted seafood).
The meal offers a quiet resonance through a balance of aroma, texture, and color.
사찰음식은 세계 미식계에서 건강하고 지속가능한 퀴진(Cuisine)으로 자리 잡았고, 채식·비건 식문화 확산에
큰 영향을 주고 있다.
Temple cuisine has established itself in the global culinary world as a healthy, sustainable cuisine and has
significantly influenced the growth of vegetarian and vegan food cultures.
6. 냉면(평양·함흥): Naengmyeon (Pyongyang & Hamhung)

본디 겨울 음식으로 시작한 냉면은 동치미·사골육수의 차가운 국물에 메밀 면을 말아 먹던 북녘의 생활음식
에서 비롯되었으나 분단과 이주의 역사 속에서 남하해 서울과 전국으로 퍼졌고, 지금은 사계절 음식이 되었다.
Naengmyeon, which began as a winter dish, originated in the North as an everyday food of buckwheat
noodles served in icy broths of dongchimi (radish water kimchi) or beef bone stock.
Through the history of division and migration, it moved south to Seoul and nationwide, and today it is
enjoyed year-round.
문화적 의미로 보면 평양냉면은 메밀의 구수함과 담백한 국물의 미학, 함흥냉면은 감자·고구마 전분 면의
쫄깃함과 매콤한 회냉면으로 대비되고 있으며 한 그릇에 이주·향수·적응의 서사가 겹친다.
Culturally, Pyongyang naengmyeon is prized for the earthy aroma of buckwheat and a clean, restrained
broth, while Hamhung naengmyeon contrasts with the chewy bite of potato/sweet potato starch noodles
and a spicy hoe-naengmyeon (raw fish) style. Layered in a single bowl are stories of migration, longing,
and adaptation.
특이한 점은 숯불 불고기나 갈비를 먹은 뒤 냉면으로 마무리하는 ‘코스의 리듬’은 한국인의 외식 문화에 깊이
자리한 관습으로 외국인의 눈에는 다소 흥미롭게 보이는 것 같다.
An interesting custom is the “course rhythm” of ending a meal of charcoal-grilled bulgogi or galbi with
a bowl of naengmyeon—a practice deeply rooted in Korean dining culture that many foreign diners
find intriguing.
냉면을 시식할 때 식초와 겨자를 곁들이되, 먼저 육수의 향을 그대로 맛보는 것이 ‘애호가의 예의’로 통한다
하니 '내 자신도 그랬나'하고 뒤돌아보니 맞는 것도 같다.
When tasting naengmyeon, vinegar and mustard may be added, but it’s considered the connoisseur’s
courtesy to first savor the broth as it is. Looking back and asking myself, “Did I do that too?” I suppose
I did.
7. 잡채( Japchae)

전래시기는 조선 광해군 때 궁중 연회 음식에서 출발해, 훗날 고구마 전분 당면이 보급되면서 지금의 잡채
로 자리 잡았다 하며 여러 재료를 따로 볶아 색과 식감을 살린 뒤 한데 섞는 정성이 핵심이라 한다.
It is said to have originated as a royal banquet dish during the reign of King Gwanghaegun of Joseon,
and later, with the spread of sweet potato starch noodles, took on the form of japchae we know today.
The essence lies in stir-frying each ingredient separately to preserve its color and texture, then
combining them at the end.
문화적 의미로는 혼례·회갑·제사 상에 빠지지 않는 ‘경사 음식’으로, 다양한 재료의 조화는 풍요와 화합을
뜻하며 칼색(채소의 색채 조화)과 칼맛(각 재료의 식감 유지)은 한식 조리 미학을 보여준다고 전해진다.
Culturally, it is a celebratory dish that appears unfailingly on tables for weddings, hwangap
(60th-birthday) banquets, and ancestral rites. The harmony of diverse ingredients signifies abundance
and unity, and “knife color” (the balanced hues of the vegetables) and “knife taste” (keeping each
